Ingredients
Here's what you'll need:
- 1 lb boneless, skinless chicken breasts or thighs
- 8 cups chicken broth
- 2 cups chopped carrots
- 2 cups chopped celery
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 bay leaf
- 8 oz egg noodles
- Salt and pepper to taste
- Chopped fresh parsley, for garnish (optional)
Instructions
1. In a large pot or Dutch oven, heat a bit of oil over medium-high heat. Add the chicken and cook until browned on both sides, about 4 to 5 minutes per side.
2. Remove the chicken and set aside. Add the chopped carrots, celery, onion, and garlic to the pot and cook for 5 minutes, stirring occasionally.
3. Add the chicken broth, dried oregano, dried thyme, and bay leaf to the pot. Bring to a boil, then reduce the heat and let simmer for 20 minutes.
4. Meanwhile, shred the chicken into bite-sized pieces.
5. After 20 minutes, remove the bay leaf from the pot. Add the shredded chicken and noodles and cook for 8 to 10 minutes, or until the noodles are tender.
6. Season with salt and pepper to taste. Garnish with chopped fresh parsley, if desired.
Tips
- Use bone-in chicken for a richer broth.
- Add more or less vegetables to your liking.
- If the soup is too thick, add more broth or water.
- You can use any type of noodles you like, but egg noodles work best in this recipe.
