To make this Roasted Garlic Mashed Potatoes recipe, you will need:
- 3lbs of Yukon Gold potatoes
- 1 head of garlic
- 2 tbsp of butter
- 1/2 cup of heavy cream
- Salt and pepper to taste

Instructions
1. Preheat the oven to 400°F (205°C).
2. Cut off the top of the garlic head, exposing the cloves.
3. Place the garlic on a large piece of aluminum foil, drizzle with olive oil, and wrap up tightly.
4. Roast the garlic in the oven for 40 minutes, or until the cloves are soft and golden.
5. Meanwhile, peel and dice the potatoes into small cubes.
6. Rinse the potatoes with cold water and place them in a large pot.
7. Add enough water to cover the potatoes and bring it to a boil. Cook until the potatoes are tender, about 10-15 minutes.
8. Drain the potatoes and return them to the pot.
9. Squeeze the garlic cloves into the pot and mash them together with the potatoes using a potato masher.
10. Add butter and heavy cream. Mash and stir until the mixture is creamy and smooth.
11. Add salt and pepper to taste.
