
As the cool weather sets in, nothing warms us up like a bowl of creamy tomato soup. And what's better than adding grilled cheese croutons to it for that extra flavor and crunch? This recipe is the perfect comfort food for fall and is sure to become a family favorite.
Ingredients
To make the creamy tomato soup, you'll need:
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cans of diced tomatoes
- 2 cups chicken broth
- 1 teaspoon sugar
- 1/2 cup heavy cream
- salt and pepper to taste
For the grilled cheese croutons, you'll need:
- 4 slices of bread
- 4 slices of cheddar cheese
- 2 tablespoons butter
Instructions
1. In a large pot, melt the butter and sauté the onion and garlic until translucent.
2. Add the diced tomatoes, chicken broth, and sugar. Bring to a boil and then let simmer for 20 minutes.
3. Take the pot off the heat and blend the mixture until smooth.
4. Stir in the heavy cream and season with salt and pepper to taste.
5. To make the grilled cheese croutons, preheat a skillet over medium heat.
6. Butter one side of each slice of bread and place 1 slice of cheese between two slices of bread, butter side out.
7. Place the sandwich in the skillet and cook for 3-4 minutes on each side until the bread is golden brown and the cheese is melted.
8. Remove from the skillet and let cool before cutting into small crouton-sized pieces.
9. Serve the creamy tomato soup with the grilled cheese croutons on top.
