Delicious Chicken Pot Pie Recipe for a Comforting Meal

Chicken pot pie is a beloved comfort food for many people. This savory dish is perfect for a cozy dinner at home or as a potluck contribution. In this recipe, we will show you how to make a delectable chicken pot pie with a flaky crust and creamy filling.

Ingredients

For the pie crust:
-2 and 1/2 cups all-purpose flour
-1 teaspoon salt
-1 cup unsalted butter, chilled and cubed
-1/4 to 1/2 cup ice water

For the filling:
-1/3 cup unsalted butter
-1/3 cup chopped onion
-1/3 cup all-purpose flour
-1/2 teaspoon salt
-1/4 teaspoon black pepper
-1 and 3/4 cups chicken broth
-2/3 cup milk
-2 cups cooked shredded chicken
-1 cup frozen mixed vegetables (peas, carrots, green beans, corn)

Instructions

1. Preheat your oven to 425°F.
2. To make the pie crust, mix the flour and salt in a large mixing bowl. Add the cubed butter and mix until the mixture resembles coarse crumbs. Gradually add in ice water, 1 tablespoon at a time, until the dough forms a ball. Divide the dough in half and wrap each half in plastic wrap. Chill in the refrigerator for at least 30 minutes.
3. In a large saucepan, melt the butter over medium heat. Add the onion and sauté until tender. Stir in the flour, salt, and pepper until well blended. Gradually stir in chicken broth and milk and bring to a boil, stirring constantly. Cook and stir for 2 minutes until the filling thickens.
4. Add the cooked chicken and mixed vegetables to the saucepan and stir to combine.
5. On a floured surface, roll out one of the pie crusts to fit a 9-inch deep dish pie pan. Add the filling and cover with the second pie crust. Crimp the edges and cut a few slits in the top crust to allow steam to escape.
6. Bake for 30 to 35 minutes or until the crust is golden brown. Let it cool for 10 minutes before serving.
