Ingredients
To make this chicken and dumplings recipe, you will need:
- 1 whole chicken, cut into pieces
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 cup unsalted butter
- 2 cups chicken broth
- 2 cups milk
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 carrots, peeled and chopped
- 2 stalks celery, chopped
- Salt and pepper to taste
Note: You can also use pre-cooked and shredded rotisserie chicken to save time.
Instructions
1. In a large pot, melt the butter over medium heat. Add the garlic, onion, carrots, and celery and sauté for 5-7 minutes, until the vegetables are tender.
2. Add the chicken pieces to the pot and season with salt and pepper. Cook until browned on both sides, about 5-7 minutes.
3. Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for 30-40 minutes, until the chicken is cooked through.
4. While the chicken is cooking, make the dumplings. In a medium bowl, whisk together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse sand. Stir in the milk until a thick dough forms.
5. Drop spoonfuls of the dumpling dough into the pot with the chicken. Cover and simmer for 15-20 minutes, until the dumplings are cooked through and the sauce has thickened.
6. Serve hot and enjoy!
Tips
1. If you prefer a thicker sauce, you can stir in a cornstarch slurry (1 tablespoon cornstarch mixed with 1 tablespoon water) at the end of cooking.
2. This recipe can easily be doubled or halved depending on the number of people you are serving.
3. Leftover chicken and dumplings can be stored in the refrigerator for up to 3 days.
